WINE INFORMATION

Elaboration: Manual harvest in small 15-kilogram boxes. A double selection of bunches and berries is carried out on the sorting table. The grapes arrived at the winery under optimal sanitary conditions and of high quality. Cold maceration lasted approximately 5 days and then fermentation at a controlled temperature in stainless steel truncated-cone tanks. Malolactic fermentation takes place in 225-liter French oak barrels, with lees worked into the barrel.
Aging: 24-26 months of aging in medium-grain French oak barrels.
Tasting Notes:
Visual: Intense garnet color, high layer, clean and bright.
Nose: Ripe aromas of black fruits and red plums stand out, along with notes of undergrowth, sweet spices such as vanilla, and a subtle toasted touch. Elegant, dense, and carefully concentrated on the nose. Perfect harmony of dark cocoa, licorice notes, wet earth, and balsamic notes, vibrant roasted coffee notes, and a surface of cedar wood, toffee, and dark chocolate.
Taste: Intense and long-lasting wine displaying lively tannins characteristic of the gravelly soil where this vineyard is located. Enveloping red wine full of flavors, soft, ripe tannins, and a long, very fruity finish with a pleasant ripeness. A velvety, powerful, and structured finish, broad and with a long, deep aftertaste.

CHEESE INFORMATION

PÁRAMO DE GUZMÁN CHEESE CAN IN EVOO, 250 GR.

Páramo de Guzmán is a 100% artisanal and highly exclusive cured Churra sheep cheese, made when Castilian pastures have a higher concentration of aromatic herbs. The cheese is then canned in 100% Picual EVOO (Extra Virgin Olive Oil).

Elaboration: This cheese is made in a traditional way. We use only raw Churra sheep's milk and natural rennet, cured for a minimum of 12 months. The cheese is then canned in 100% Picual Extra Virgin Olive Oil.
Product Name: Cured Sheep's Milk Cheese.
Net Weight: 250 g.
Ingredients and Allergens: Raw sheep's milk, salt, lysozyme (an egg derivative), rennet, lactic acid, preservative E-252, and extra virgin olive oil.
