WINE INFORMATION

Elaboration: Manual harvesting in 15 kg boxes, a bunch sorting table, and subsequent gravity-fed fermentation in 150 hl truncated cone-shaped tanks. Cold maceration for around 5 days and subsequent fermentation at a controlled temperature. The production seeks a balance of fruit, acidity, and oak, combining the type of oak to achieve an aging process that always adapts to the quality of the grapes in each harvest.
Tasting Notes:
Visual: Intense, clean, and bright cherry red color.
Nose: The aromatic and fresh tones of blue flowers (violet) are surprising, over those of red fruit (picota cherry). The well-integrated oak adds complexity with toasted notes like brioche or caramel, and smoky notes like cocoa and toffee.
Taste: The extraordinary balance between its components stands out, without harsh edges. Good acidity that provides freshness. Fresh fruit appears in the center of the mouth, followed by soft tones of smoke, roasted notes, cocoa, and black licorice. Well-integrated tannins and a long aftertaste.
Aging: A maximum of 9 months of aging in French (20%) and American (80%) oak barrels.
Serving temperature: 14-16°C

PÁRAMO DE GUZMÁN CHEESE CAN IN EVOO, 250 GR
Páramo de Guzmán is a 100% artisanal and highly exclusive cured sheep's milk cheese, made when Castilian pastures have a higher concentration of aromatic herbs. The cheese is then canned in 100% Picual Extra Virgin Olive Oil (EVO).
Elaboration: This cheese is made in a traditional way. We use only raw milk from Churra sheep and natural rennet, and the cheese is cured for a minimum of 12 months. The cheese is then canned in 100% Picual Extra Virgin Olive Oil.
