ELABORATION AND AGING

Elaboration: Manual harvesting in 15 kg boxes, a bunch sorting table, and subsequent gravity-fed fermentation in 150 hl truncated cone-shaped tanks. Cold maceration for approximately 5 days and subsequent fermentation at a controlled temperature. The production process seeks a balance of fruit, acidity, and oak, combining the type of oak to achieve an aging process that always adapts to the quality of the grapes in each harvest.
Aging: A maximum of 9 months of aging in French (20%) and American (80%) oak barrels.

TASTING NOTE

Appearance: Intense, cherry-red, clean, and bright.
Nose: Surprisingly aromatic and fresh, the tones of blue flowers (violet) over those of red fruit (picota cherry). The well-integrated oak adds complexity with toasted notes like brioche or caramel, and smoky notes like cocoa and toffee.
Tasting Note: The extraordinary balance between its components stands out, with no harsh edges. Good acidity provides freshness. Fresh fruit appears in the center of the mouth, followed by soft tones of smoke, roasted notes, cocoa, and nuances of black licorice. Well-integrated tannins and a long aftertaste.
