ELABORATION AND AGING
Elaboration: Manual harvesting in small 15-kilogram boxes with rigorous inspection, bunch by bunch, on a sorting table. The grapes arrived at the winery under optimal sanitary conditions and of high quality. Cold maceration lasted approximately 5 days and then fermentation at a controlled temperature in stainless steel truncated-cone tanks. Malolactic fermentation takes place in 150 HI wooden foudres.
Aging: 12-14 months in French (80%) and American (20%) oak barrels.
TASTING NOTE
Appearance: Garnet red with a youthful, intense, and bright rim.
Nose: Elegant, pleasant, clean, intense, and complex aromas on the nose. Balsamic, violet, leaf litter, cigar box, and licorice aromas. The spices and roasted notes typical of its French oak aging add richness, volume, and complexity to the overall wine. The predominant varietal intensity, along with the other aromatic notes described above, result in a serious, well-rounded, and very Raíz wine.
Taste: A strong personality upon tasting. Freshness, tension, without excessive structure or density, yet sweet at the same time, a balance between the components that make this a highly drinkable wine, where the spices, balsamic, and licorice root return to the palate.
