Mediterranean and Asian cuisines such as rice dishes, sushi, carpaccio, and tartares play well with the fruity note of this particular wine. It's also possible to pair it with appetizers, smoked dishes, and salads, as it has a little more volume than a young white wine and therefore pairs very well with soft cheeses such as goat cheese, Camembert, and Brie, as well as pasta, as it defats and adds a playful touch to the palate. ELABORATION
Elaboration: Harvested by hand in 15 kg boxes. Upon arrival at the winery, the grapes are sorted and then vatted at a temperature of around 8°C. After a brief maceration at low temperature, the must is bled off. After settling, a careful fermentation takes place in an isothermal tank, never exceeding 13°C. After only two rackings, during which the wine clarifies, it is slowly bottled.
NOTA DE CATA
Visual: Vibrante color fresa , limpio, brillante y elegante. Olfativa: Aromas intensos a fruta roja, cerezas, frambuesas y mora negra. En nariz presenta una tremenda intensidad impropia de los vinos rosados de su categoría, conformando una deliciosa y envolvente fragancia de fruta fresca, con imponente presencia de fruta de hueso y mucha fruta roja (fresa ácida y cereza). De fondo aparece una explosión floral evocando las sutiles notas de un jardín en primavera. Gustativa: Entra como una ola de fruta fresca y explosiona en boca a través de una placentera acidez y un volumen que aporta cuerpo y persistencia. En retronasal nos devuelve toda la frescura de los frutos rojos y las flores. Un rosado con el cuerpo de tinto y la frescura de un blanco, con mucha chispa y un toque de alegría que te invita a seguir bebiendo.
